Maurya Cuisine of IndiaMaurya’s decor is attention-grabbing—hot-orange walls, billowing curtains, shining silver mirrors, glittering tapestries and a gorgeous, bejeweled orb lamp in the middle of the dining room. And the food is equally resplendent. When vegetarians sleep, they’d do well to dream of sabz-e-bahar’s savory stewed vegetables in a spicy tomato-and-onion sauce, or the thick, creamy chana dal (lentil) soup, fragrant with fresh cilantro and ginger.
