Sandia means “watermelon” or “green chile” in Spanish and Sandia is the best of both. Sandia chile is a large chile approximately four to eight inches long. It dries to a deep burgundy color and comes from the Mesilla Valley in New Mexico. Sandia is also the name of the mountain range located in Albuquerque, New Mexico where the first Sandia Chile Grill was opened. At sunset the mountains turn a shade of pink and a spectacular site.
