What's new at Rudy's?
We are excited about our newest menu addition, Rudy’s Breakfast Tacos. Available every morning at 7 a.m. starting at $1.99, guests can get made-to-order tacos or run in and get them from our Grab-N-Go Taco stand for fast service. Our tacos are a folded flour tortilla filled with eggs, hash browns, beans, cheese, and red or green chile, along with a variety of signature Bar-B-Q meats including our own slow-roasted carne adovada from oak wood fired pits.
What other dishes is Rudy's known for?
Since 1994, we’ve been serving delicious Bar-B-Q, a favorite for those seeking comfort food. In fact, Alibi readers have voted Rudy’s as “Best Barbecue” for the last 14 years! Best-sellers are the slow-smoked brisket, turkey, pork ribs, tangy pulled pork and many of our signature side dishes such as green chile stew, creamed corn, and jumbo smoked potatoes filled with butter, sour cream, cheese and smoked meat.
What do you offer that the competition doesn't?
Dining in Rudy’s is truly a unique experience as our guests will immediately encounter a lively, casual, friendly environment right when they walk in our doors. Our counter service allows guests to see activity in the kitchen, the variety of meats we offer being cut to order along with freshly prepared side dishes. Served on butcher paper, guests have their Bar-B-Q within minutes to enjoy in our restaurant, on the patio or for take-out. In addition, our Group Meals are a great way to easily serve Bar-B-Q at any event, everything all ready to go for pick-up including plates and dinnerware. We also have a great Catering Team available for larger events. And now, we’ll be serving Rudy’s Breakfast Tacos every morning from 7-10 a.m. Made to order at our counter or available in our Grab-n-Go station in the dining room along with hot coffee, our guests can enjoy our signature Bar-B-Q first thing in the morning!
What is your company's greatest asset?
Without a doubt, our greatest asset is our people. We have a remarkable group of staff and in many ways feel a significant kinship with one another entering our 18 th year. We have seen people grow up with us, hired as teens and continuing to work with us well into their productive adult lives. It’s been extremely gratifying to share our success with so many of our employees and their families.
What contributions to the community are you most proud of?
Since our opening, we have been dedicated to involvement in the lives of youth through a variety of organizations including the New Mexico Activities Association, the University of New Mexico, Special Olympics of New Mexico, All Faiths Receiving Home, and many public and private schools across our state. We have provided discounts and food to help organizations working with youth and their families facing cancer, heart disease and other challenging difficulties. Our belief is that through activity and athletics, youth are empowered and have greater opportunity to achieve their greatest potential—something we want to be a part of.
What is your business philosophy?
Our focus upon our guests and ensuring a friendly environment along with offering a consistent quality product has helped us achieve success. Every guest is welcomed, cared for and thanked for their visit. These last several years, our goal has been to achieve perfection, full well knowing that is not possible. Inspired by Vince Lombardi, we believe if we strive to be perfect, we can become excellent. I consider our operation much like a sports team in that we view no one as more important than anyone else. The owners are like General Managers, our managers are the coaches and our employees are the players. All of us are necessary to achieve success. We expect a great deal of our employees, however we feel we give them much in the way of recognition and tools to help them achieve in any endeavor in life. We subscribe to a work ethic that includes having fun, making one another’s day, being present and choosing to be positive. Additionally, our adage has always been to be involved in our community; we believe giving back is of the utmost importance and a significant component in how we do business.
