      The chickens are laying again, the greens and onions are up, and the days are getting longer: Brunch season is here. I've been practicing a simple dish of poached eggs served on a bed of spinach and asparagus, garnished with crispy pieces of salt pork or bacon. Sometimes I drench the whole business in a blanket of hollandaise sauce. Or more often, it’s a blanket of failed hollandaise that I resurrect to perfection with mayonnaise and a microwave.         If you've watched one of the dozens of food industry documentaries that have come out over the past few years (Food, Inc., Fresh, American Meat, Farmageddon) you're already familiar with Joel Salatin. The much-interviewed farmer, author and polyculture advocate is renowned for his wry observations about America's food system. On Saturday, Salatin passes through New Mexico to offer some of his earthy insights to the kids at Camino de Paz Montessori School and Farm. For $60 ($25 children under 11), you can listen in over a brunch assembled from ingredients raised right at the school. Students will also play marimba music and offer tours of the self-sustaining Santa Cruz, N.M., property, about 20 miles outside of Santa Fe.         This market basket overflows with surprises

        The “farm to table” movement—or “field to fork,” or “farm to plate,” and so on—has been gaining traction in every corner of the country, and Albuquerque’s newest member of this growing club didn’t mince words when deciding on its name. After a long winter of teasing us via its Facebook page, Farm & Table finally opened on Fourth Street between Paseo and Alameda. The setting is gorgeous, inside and out. The food walks the walk and is reasonably priced for what you get. And the chef, Ka’ainoa Ravey, is a freaking genius.
