There’s plenty of vegetable-based and vegetarian choicesgolden lentil soup is a standout, and don’t pass on the paneer dishes. For meat eaters, the goat curry (made with local, kosher meat) is as decadent as any dish you’ll find anywhere, served in a brown gravy that’s full of disintegrated potatoes and the occasional green fleck of fresh herbs. Don’t get turned off by Saffron Tiger’s cafeteria style of service. It’s a local restaurant that’s fast in the sense that you order quickly, but this is classic Indian cuisine, prepared the traditional way. There’s plenty of vegetable-based and vegetarian choicesgolden lentil soup is a standout, and don’t pass on the paneer dishes. Taj Mahal usually wins Best Indian and Best Lunch Buffet in our Best of Burque Restaurants polls, no doubt for its amazing lunch buffet, or at least for bathing its chicken in a fiery red tabasco-like sauce that’s good and sweat-inducing. India Kitchen knows hot. In fact, novice players shouldn't even order medium, and the Pope of Peppers himself, Dave DeWitt, says the lamb vindaloo is the hottest dish in Albuquerque. Outside is a strip mall, but Taj Palace’s interior is understated elegance. Hit the buffet for various curries that are tolerably piquant (go for the goat) and fresh naan that’s soft and chewy. Maurya’s decor is attention-grabbinghot-orange walls, billowing curtains, shining silver mirrors, glittering tapestries and a gorgeous, bejeweled orb lamp in the middle of the dining room. And the food is equally resplendent. When vegetarians sleep, they’d do well to dream of sabz-e-bahar’s savory stewed vegetables in a spicy tomato-and-onion sauce, or the thick, creamy chana dal (lentil) soup, fragrant with fresh cilantro and ginger. Chicken makhani translates as “butter chicken,” and it lives up to the comparison. (Alibi Staff, August 11, 2010)
