The ladies here make their own tortillas. Are you digging this? They roll out perfect little discs of dough and heat them on the griddle until they become huge, puffy pillows ready to receive a heap of chile and runny-yolked egg. And they’ve been doing it the same way since 1961. Don’t be stupid. Go to Duran’s and do not leave without ordering something involving a fresh flour tortilla, preferably in combination with the Best Red Chile in the city (according to past reader polls).
