Sure, you go in thinking you’ll be good and get a skinny latte, scrambled egg whites and a side of turkey and green chile sausage, but five minutes later somebody’s saying “eclair” and the voice is coming from your mouth.     I've long had a love/hate relationship with Flying Star. It's expensive, yuppie-ridden, and sometimes the service and food is disappoints. On the other hand the desserts are top notch, the coffee is good and the variety of food, including lots of vegetarian stuff, is to be admired.

    So Downtown Flying Star now has this awesome manager who has won me over. A few weeks ago I called in a soup order. He told me they had Butternut Squash Bisque and Gumbo—two of my favorites! Typically the options are unappealing— like 'you can either have corn chowder and Nana's pork stew.' Ick. But I was very excited for that day's options, and I asked the guy all kinds of annoying questions trying to determine which would be better. He was patient and just told me to come to the restaurant where I could try both, then decide. Yay! So both soups were excellent. I chose gumbo and enjoyed it very much (though, they should really offer to serve it with rice or potato salad).

    Then today I went there for lunch. When the food came my dining partner's dish was wrong, so the awesome manager guy took it back, and when it took a little long to return he refunded our lunch (so we could go blow it on magazines and cake)!

    So, big ups to that guy and Downtown Flying Star.

    I've had a lot of problems with the downtown Flying Star cook staff. Apparently, using tofu instead of egg really confuses them. Also, downtown never seems to fully cook the rice.

    Isn't there some type of law that would prohibit that kind of blasphemy? Or was the gumbo not vegetarian?

    That's how they say 'shrimp' in parts of the south. Anyhow, the gumbo has some tiny fwimps in it.

    It wasn't vegetarian—shrimp and chicken. Vegetarian gumbo isn't blasphemy though. Gumbo Z'herbs, or green gumbo is a lenten dish that contains up to nine kinds of greens, and originally had no meat. Of course, my New Orleans cookbook says to make it with ham and veal—annoying.

    I just cooked gumbo (with andouille, chicken and oysters) for the first time this weekend. Now that I know exactly how it's made I can see not including meat. Gumbo means okra anyway.

    the more readily available type would have some form of seafood or meat in it, so I assumed the purists would demand it as such. Are you to tell me there a vegetarian form of jambalaya, too?
