Start with a plate of exotic vinegar beef (a salad of sliced, pickled beef and veggies in fish sauce) or stick close to home spring rolls, wrapped up with a green onion stem. A selection of
bánh mì
sandwiches layer on the meat (or not—Pho Viet caters to vegetarians and vegans, too), shredded veggies and herbs, and rice noodles into six inches of crusty baguette.
