I Promise I’m Spelling Chili Right, Y’all

I’m not talking about what you get your breakfast burrito smothered in (although that would probably be delicious). I’m talking about chili, the stuff you get on your hot dog at a baseball stadium in Texas. On Saturday and Sunday, August 4 through 5, Route 66 Casino and Hotel hosts the Southwest Regional and N.M. Chili Cook-off Championship, where members of the New Mexico chapter of the International Chili Society (actually a thing) gather to see who’s got the best pot of bubbling meat goop. From 10am to 5pm each day you can sample the state’s finest and cast your vote for the People’s Choice Chili. This event is $5 per day and open to the public. (Robin Babb)

These cook-offs consistently have over 20 Red chili cooks in addition to Verde and Salsa always qualifying. This gives you SIX chances to qualify for the World Championship in St. Louis, Missouri (Sept 28th -30th).

Prize money is good! Everyone you talk to that has been to these cook-offs, has fully enjoyed themselves and has had a fantastic time at the Casino and cook-offs.

 

 COMPETITION ENTRY

You must be an ICS Member to compete. Entry fees are separate per category (i.e. Red, Homestyle, Verde, etc.) and will be collected independently by the Cook-off Organizer. Please contact the organizer (info at top) for more information.

 All contestants must prepare THREE gallons of People’s Choice chili (PC).
