Meat, for some of us, is a passion. Don't listen to the vegans. It's OK to be carnivorous. Sometimes even desserts can't even match the decadence of an exquisitely butchered, seared and seasoned cut of meat. This two-day meat-tacular brings together incredible chefs providing workshops and field trips, concluding with a steak flight. Yes, the meal of carnists' dreams. Meat Matters has a lot going on. On Sunday, Nov. 4 from 9am to noon, a James Beard award-winning chef presents From Life to Meat: A Hands-On Experience at Polk's Folly Farm, which is now sold out. In the afternoon from 3 to 6pm, Discovering the Unknown Flavors of Meat: A Whole-Animal Butchery Experience gets raw at Three Sisters Kitchen for $25 to $80. Monday doesn't relent. Check out Whole-Animal Butchery and Utilization: A Chef's Philosophy on Nov. 5 from 9am to 2:30pm at Three Sisters Kitchen for $50 to $195. Lastly, chefs and steak-enthusiasts get real satisfaction at Farm & Table from 6 to 10pm for the Steak Flight Tasting Dinner for $95. This event is geared towards professional chefs of all levels. This two-day event includes butchery workshops, field trips and demos to help educate and inspire fellow professionals culminating in a steak flight tasting dinner with five identical tasting courses.

Join us for an in-depth look on how we source, eat, think, and talk about meat! This two-day event will include butchery workshops, field trips and demonstrations to help educate and inspire fellow professionals.

Workshops will be led by Adam Danforth, a James Beard award-winning author of two books about slaughtering and butchering livestock; Camas Davis, founder of the Good Meat Project; and Derek Wagner, co-chair of Chefs Collaborative and chef/owner of Nick's on Broadway.

The workshops will culminate in a Steak Flight Tasting Dinner featuring five identical tasting courses, representing five different beef producers: Susieville Cattle Company, Ranney Ranch, San Juan Ranch, JX Ranch, and Alameda Farms. Local wine will be paired with the tasting for a true taste of New Mexico terrain and terroir.

Presented by the Chefs Collaborative New Mexico Local Group and Edible Santa Fe, proceeds will benefit Chefs Collaborative  and the Southwest Grassfed Livestock Alliance.
