Cheese Making Class
Artisanal course is ideal for the home cheesemaker and anyone considering small-scale commercial production.
In three fun-filled days, we will make at least seven different varieties of cheese (examples: Quark, Yogurt, Ricotta (whole milk and whey), soft-ripened cheese, Feta, Trappist, and Gouda). You will learn how four basic ingredients can be manipulated to create literally hundreds of cheeses, and how you can create exquisite cheese with basic equipment found in most kitchens. By the end of the class, our students will be able to pick up any cheese recipe and have a good idea of how to successfully make that cheese. Included in the class is our artisanal cheese course manual with recipes, a comprehensive cheese tasting and wine pairing session, aprons, lunch on each of three days, and everything you need to make cheese over the three-day course. Students will also have the opportunity to take home some of the cheese they have made. Class Dates: November 10-12, 2012 Cost: $550 per person Location: 430 W.
