The dinner features a five-course meal expertly paired with selections from the NM winery specializing in sparkling wines.

Corn Maiden Restaurant, located at Hyatt Regency Tamaya Resort & Spa, has announced a wine pairing dinner partnered with Gruet Winery. The dinner will feature a five-course meal expertly paired with selections from Gruet Winery, a New Mexico-based winery specializing in sparkling wines.

 

Laurent Gruet, head winemaker and son of the founder of Gruet Winery, will also be at the event to speak with attendees, talk more about Gruet’s specialized wines, and discuss the pairing experience.  

 

The wine pairing event will include the following courses:

 

First Course

Cooked goose served with scarlet runner beans, micro popcorn, and pumpkin accented with a cedar smolder.

Paired with Gruet Winery’s Blanc de Blancs

 

Second Course

Salad with baby truchas lettuce, sage blossom, purslane, goat cheese, pinon granola, and served with a prickly pear vinaigrette.

Paired with Gruet Winery’s Rose made with Pinot Meunier grapes

 

Third Course

Trout topped with a salmon caviar hollandaise and served with wild rice, fennel, amaranth, and a maple vinegar air.

Paired with Gruet Winery’s Chardonnay

 

Fourth Course

Santa Fe-cut campfire wagyu strip steak served with tap-root charges, jimmy nardelo peppers, juniper coal, and a pepita mole.

Paired with Gruet Winery’s Pinot Noir

 

Dessert

Corn crème brulee, chocolate tamale, and chokecherry corn ice cream.

Paired with Gruet Winery’s Doux wine, a blend of Chardonnay and Pinot Noir

 

The wine pairing dinner will take place at Hyatt Regency Tamaya’s Corn Maiden restaurant on Thursday, October 3 at 5:30 p.m. It is $85 per person plus tax and a 20% gratuity. Reservations are required and can be made by visiting www.opentable.com/the-corn-maiden.
