Chef Jon Young is boldly calling what he makes “New Mexican Style Barbecue,” four words which just might anger bbq purists the nation over. That temper might cool when they try what he’s serving up, though. Young’s ribs, pulled pork, brisket and chicken are all smoked over apple wood and seasoned with the Land of Enchantment in mind: think carne asada dry rubs and smoky red chile sauces. Get a side of calabacitas coleslaw or elotes to go with and you’ve got a meal that will make believers of us all. Don’t forget to try ABQ BBQ’s take on the peach cobbler: the peach chingon.
