Commanding cows or shadowing sheep is hard damn work, so the first thing to do every morning is to load up on carbs. Huevos Rancheros—fried eggs, chile and cheese fronting a couple of buried flour or corn tortillas—are just the thing for a quick and hearty brekkie on the range. In the words of the Grand Wazoo, “They’re so light and fluffy brown, they’re the finest in the town!” Pancakes are another form of cowpoke food whose comfort and ease of readiness crept into popular culture eating habits after the second world war. Here in Burque our scouts took off from camp and came back to report that the best they had came from there; the Crazy Good Hotcakes—blueberries, brie and all—more than passed muster. (AM)

Dudes, this place is, like, all waffles all the time. They have sweet waffles. They make savory waffles. Everything is handmade and they’ve got batters that range from blue corn to buttermilk to buckwheat and vegan ricey-coconut. Syrups, fresh fruit and a host of other accompaniments really do make this UNM-area restaurant into waffle heaven. (AM)

The nature of brunch: Carmel Pear French Toast, Potato-Ale Soup topped with Chives, a sandwich with pimento cheese, roasted Berkshire pork, red onion, arugula and a fried egg on brioche, Fresh squeezed Mimosas ... help I don’t think I can stop myself—especially if they bring out the Veggie-Lentil Soup with local goat cheese and fresh herbs!
