S’mores are not my favorite camp dessert, but I do love roasting marshmallows. I spent this past weekend camping in the Santa Fe National Forest, perfecting the art of marshmallow roasting. I prefer them brown (not burnt) with a crispy shell and a gooey inside—flaming mallows just don’t make the cut. The trick is in the white-hot coals. If there is too much flame, the mallow will turn to charcoal and then becomes fire fuel (which happened to me many times). But I haven’t thought about this nearly as much as these peeps. And that Peep in the video, well, he just didn’t have much of a chance. Ah, summer time, how I love thee.
