For years, (or ever since I’ve lived in a house with a fireplace) I’ve cut the branches off my Christmas tree and aged the trunk (usually three to four years) to use as firewood. You don’t want to burn the branches in the fireplace, though; they’re too pitchy and will gunk up your chimney.This year, I started a new tradition of burning the branches in the chimnea and cooking fish on the coals. The fish in the pictures is just some tilapia that was on sale at Albertson’s.I served my grilled fish with a spicy guacamole garnish, and it was fabulous.
